Lamb Shoulder

Ingredients:

  • 1 Bone-in lamb shoulder 
  • 1 Bunch of mint
  • 1 Tbsp Rosemary
  • 1 Tbsp Thyme
  • 2 Tbsp Salt
  • 1 Tsp Pepper
  • Olive Oil
  • 1 Cup Stock

Directions:

  1. Remove lamb shoulder from the refrigerator and allow it to come up to room temperature. Preheat the oven to 400° F.
  2. Coat lamb with olive oil and salt. Sear each side of lamb for 1-2 minutes or until golden brown. Place lamb in a roasting dish.
  3. Mix together rosemary, thyme, pepper and garlic and coat the lamb. Place mint on top of the lamb. Add stock to the bottom of the roasting pan.
  4. Cover lamb tightly with foil and roast for 20 minutes.
  5. Turn the oven down to 315° F and cook for 3-4 hours or until meat is tender and begins to pull away from the bone.
